The Bikini Cocktail
Makes enough for 10 servings
To make the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
For the Drink (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Method
For the Syrup: Combine the listed components in a saucepan, bring to a light boil, agitating until the sugar dissolves. Next, turn off the stove allowing it to cool entirely. Pour to a sealable bottle, seal and refrigerate it chilled, it can be stored for around four weeks.
For the Batch Mix: Combine all the spirits and syrup into a big jug, let it rest for one hour, then filter it best through cheesecloth, to ensure it's perfectly clear.
To serve: Measure 85ml of the cocktail base to a mixing glass packed with ice, gently stirring lightly for a minute until cold. Strain to a chilled martini glass or similar, garnish with some cranberries adding the final touch by giving it a quick spritz of mandarin oil over the top.
